Chicken Salad

Ingredients

  • 2 cups of Shredded Chicken
  • ½ cup Diced Onion
  • ½ cup Diced Apples
  • ½ Cup Diced Grapes
  • ½ Cup Diced Sweet Peppers
  • ½ Cup sliced Almonds (optional)
  • 1 cup Yogurt (Greek is the Preference, but you can use mayonnaise instead)
  • 1 tablespoon Lime Juice
  • ¼ teaspoon Cayenne Pepper (if you like it spicy you can add more)
  • Salt and Pepper to Taste

Instructions

  1. In A large bowl combine all the ingredients and then refrigerate for 30 mins to allow the flavours to combine. You can serve this in wrap or on toast. For an even healthier option make a Chicken Lettuce Wrap
